Hummus roasted pepper sandwiches

Moisture control makes a better sandwich. Dry the peppers and spinach so the bread stays firm, and avoid stacking cucumber in a thick slippery layer. Choose a hummus flavor you already enjoy. Many hummus products contain sesame; check the label along with wheat and any additional ingredients before serving.

Before you begin
This recipe makes two servings. Set out the measured ingredients and read all the steps before starting. Use the serving selector for a different number of people; timing does not scale automatically. Larger cooked batches may need a second pan or separate batches.
For a lunch to assemble later, pack the bread and chilled fillings separately. Follow the hummus label and keep perishable food cold during transport.
