Small turkey meatballs simmer in tomato sauce while orzo cooks separately for easier control. This version is written for two people, with ingredient quantities that you can scale using the recipe card. Read the whole method before heating your pan so you can prepare the ingredients in the order they are used. Cooking times are estimates and should be checked against the doneness cues in the instructions.

What makes this dinner work

Equal-sized meatballs make temperature checks easier. Handle the mixture gently; tightly compressing it can give a dense result.

Cooking orzo separately avoids guessing how much liquid the pasta will absorb from the sauce. Combine only after the meatballs have reached the required temperature.

Before you start

The base makes two substantial portions. The egg and breadcrumbs are part of the binder, so use a recipe-specific alternative if you need to avoid them.

Measure the sauce ingredients and prepare the vegetables before handling any raw meat or seafood. Keep the ingredient list beside you: changes in thickness, pan size and stove output can affect the cooking time. When multiplying servings, a second pan or separate batches may work better than crowding everything into the original pan.

Cooking and handling notes

Ground turkey and turkey meatballs must reach 165°F (74°C) in the center. Use a thermometer rather than judging safety by color.

The CDC guidance linked below covers keeping hands and surfaces clean, separating raw foods and refrigerating perishable food promptly. Check ingredient labels for allergies, including wheat, dairy, eggs, soy, peanuts and seafood where relevant.

How to make it

  1. Shape the meatballsCombine turkey, breadcrumbs, egg, garlic, oregano and salt gently. Form about 10 small, equal meatballs. Wash hands and surfaces after handling the raw mixture.
  2. Brown carefullyHeat oil in a deep skillet over medium heat. Brown the meatballs on several sides, turning gently. They do not need to be cooked through yet.
  3. Simmer to temperaturePour in tomatoes and water. Cover loosely and simmer, turning the meatballs occasionally, until their centers reach 165°F (74°C). Check several meatballs; add a splash of water if needed.
  4. Cook the orzoWhile meatballs simmer, cook orzo in a separate pot according to its package. Drain and reserve a little cooking water.
  5. FinishStir spinach into the tomato sauce until wilted. Fold in cooked orzo, loosening with a little reserved water if necessary, then serve with the meatballs.
