Seasoned ground turkey served in crisp lettuce leaves with tomato, cheese and lime. This version is written for two people, with ingredient quantities that you can scale using the recipe card. Read the whole method before heating your pan so you can prepare the ingredients in the order they are used. Cooking times are estimates and should be checked against the doneness cues in the instructions.
What makes this dinner work
Dry lettuce matters: water caught in the leaves makes the wraps harder to hold and dilutes the filling. Choose large leaves with intact centers.
The turkey is cooked separately from the fresh toppings. Use clean serving utensils and do not put ready-to-eat lettuce onto a board that held raw turkey.
Before you start
These are lettuce wraps rather than a tortilla meal. Add a side that suits your appetite; optional sides are not included in the card.
Measure the sauce ingredients and prepare the vegetables before handling any raw meat or seafood. Keep the ingredient list beside you: changes in thickness, pan size and stove output can affect the cooking time. When multiplying servings, a second pan or separate batches may work better than crowding everything into the original pan.
Cooking and handling notes
Ground turkey and turkey meatballs must reach 165°F (74°C) in the center. Use a thermometer rather than judging safety by color.
The CDC guidance linked below covers keeping hands and surfaces clean, separating raw foods and refrigerating perishable food promptly. Check ingredient labels for allergies, including wheat, dairy, eggs, soy, peanuts and seafood where relevant.

Ingredients
How to make it
- Prepare the lettuceWash and dry lettuce leaves and dice the tomato before handling turkey. Keep the lettuce crisp in a clean bowl while the filling cooks.
- Start the fillingHeat oil in a skillet over medium heat. Soften onion for about 4 minutes. Add turkey and break it into small pieces as it cooks.
- Cook thoroughlyAdd cumin, paprika and water. Cook, stirring, until the turkey reaches 165°F (74°C). Add a spoonful of water if it sticks before reaching temperature.
- Let the filling settleRemove from heat and let the steam subside briefly. Taste and adjust seasoning if needed. A slightly less wet filling is easier to hold in lettuce.
- AssembleDivide turkey between the lettuce leaves and add tomato and cheddar. Finish with lime and serve immediately. Use extra leaves underneath if a leaf tears.
